Poached Salmon Bowl

Salmon is one of my favorite types of fish.  It is so flavorful, healthy and easy to make.  I usually bake my salmon in parchment paper but decided to poach it on Monday night and love the way it came out.  Please excuse my large portions, my husband and I are hungry people and when a recipe is delicious and healthy we eat servings for two that really could feed four.

Here is my recipe:
One or one and half pounds salmon
A half cup white wine
One cup of quinoa
One package of mixed wild mushrooms
Two tablespoons butter (one would do too)
A couple handfuls of fresh spinach
Slivered nuts (I used salt and pepper slivered almonds)
Salt and pepper

I start by cooking the quinoa in a small sauce pan.  To cook one cup of quinoa you will add the quinoa and two cups of water to the pan, bring it to a boil and then simmer on low for 20 to 25 minutes.  While the quinoa begins to cook I add the package of mushrooms to a small frying pan and sauté them over light to medium heat with two tablespoons butter and a little salt.   I like my mushrooms to be meaty so I keep an eye on them so that they don't over cook.  If you don't like mushrooms you can omit them and use another vegetable or even Parmesan cheese.  

10 minutes into the quinoa cooking process I begin to cooks the salmon.  I add the wine, salmon and a little salt to a two and a half inch deep sauce pan (the kind with a lid) and cook on medium to high for 10 to 15 minutes, lid on.  When the quinoa is finished cooking I let it rest for five minutes before I gently stir in the mushrooms.  

Next it is time to plate.  I grab my spinach and arrange it in only one side of my bowl (quinoa goes on the other side) and top it with a sprinkle of almonds.  Next I add the quinoa on the opposite side of the bowl and top it all with the salmon.  The heat from the salmon will wilt the spinach ever so slightly which gives it great texture.  I finish the dish with one last sprinkle of almonds for crunch.  And voila... dinner is served!
